This mixed noodle dish, supervised by Kokoro, combines springy thick Chinese noodles with a special sauce featuring the umami and spiciness of dried fish and chili peppers, topped with Taiwanese minced pork, bean sprouts, chopped seaweed, and other ingredients. You can also enjoy a change in flavor by adding the separately packaged “kombu vinegar.”
